Breakfast, the Woolstore way
Start the day at your own pace with breakfast in the light-filled atrium. The menu is seasonal and easy-going, designed around fresh ingredients and a few Woolstore-style twists. One standout? The Sheepherders Breakfast — a tribute to early 20th-century mornings, with fried egg, Merguez sausage, Lyonnaise potato, goats curd and basil oil.
Coffee’s by ST Remio, tea’s on the boil, and you’ll find just enough time to slow down before the day begins.
Dining at Percy
Percy brings a bold, Spanish edge to Pyrmont dining — full of flavour, designed for sharing, and poured with confidence. Think Gildas and croquetas, crisp-edged soccarat with sweet pipperade, and a pork rib chop that’s brined for 48 hours, then finished with black garlic and sherry vinegar.
Drinks range from Estrella and minimal-intervention wines to signature cocktails like the Baya del Bosque — a savoury martini featuring Sheep’s Whey Vodka and Spanish vermouth, bridging the Woolstore’s heritage with Percy’s Spanish flair.
